Raspberry Almond Bars

Dining at our Cape May Bed & Breakfast

This dish always proves to be a memorable one when guests experience dining in Cape May during their vacation. We are happy to share the recipe so that you can make this crowd pleaser at home.

1 cup flour
3/4 cup oats
1/2 cup sugar
1/2 cup butter, room temperature

1/2 tsp. almond extract
1/2 cup red-raspberry preserves
1/3 cup sliced almonds

Preheat oven to 350F degrees. Spray 8-inch pan with cooking spray. Mix flour, oats and sugar in a large bowl. Add butter and cut in with pastry blender until mixture resembles coarse crumbs. Stir in almond extract until blended. Reserve about 1 cup oat mixture. Press remainder evenly over bottom of pan, adding more mixture if needed to cover. Spread preserves over top to about 1/2 inch for edges. Mix almonds with reserved oat mixture. Sprinkle evenly over preserves, then press down gently. (Some preserves will show through.) Bake 25 to 30 minutes or until edges are golden. Cool in pan on rack. Cut into bars.
